Buckeyes!

Christmas can be a tough time to be gluten-free because … because cookies everywhere, that’s why!  Sugar cookies, gingerbread cookies, everyone’s always shoving fluffy, moist, tantalizing cookies under your nose.  It never gets easier having to politely turn down these offers!  
But screw those cookies.  The most delicious Christmas treats are 100% gluten-free and they are BUCKEYES.
1/2 cup softened butter
1 1/2 cup peanut butter
3 cups powdered sugar 
1/4 tsp vanilla
2 cups chocolate chips
Mix together the butter, peanut butter, and vanilla.  Fold in the powdered sugar.  Form the mixture into balls and freeze for an hour.
Melt chocolate chips over a double boiler.  Insert a toothpick and dip the balls mostly in the chocolate, leaving a small amount of peanut butter “buckeye” exposed (get it?) and set on waxed paper.  Freeze for half an hour, remove, and demolish.
Depending on the size of your balls (heh) these may make up to a dozen, but peanut butter balls have been known to disappear before even making it to the dipping stage!

  1. Those look pretty freaking delicious! I'm thinking about going gluten free for a week or two. I have a feeling I'm going to starve.

    1. I promise you won't starve at all! And if you have a Trader Joe's nearby, they have amazing brown rice pasta (or splurge on the Brown Rice & Quinoa Pasta!) to make an easy transition. AND MAKE THESE! They're so delicious, they won't last a day!
